Food served at fairs around the country has become increasingly exotic and over the top. Chefs and other culinary experts say it is a reflection of an evolving American palate, the ubiquitousness of food programs that highlight cuisine from different countries, and the simple drive to try the newest thing. "People are getting more adventurous, and food TV has a lot to do with it," said Sacramento chef Randall Selland. "I think it's neat that the fair is offering more than just fried Twinkies and Cinnabons." July 13, 2011
