The real steal: Create a full meal with select rolls priced at $5, including Mikuni classics like the Fair Oaks, made with crispy fried shrimp for those who aren't fans of raw fish. Also $5 are the crab- stuffed Flamin' Shrooms and lightly battered, fried-just-right tempura. Other small bites like edamame and sunomono cucumber salad are $3, and potstickers, select hand rolls and nigiri sushi of the day are $4.

The vibe: All these establishments have a passion for food, drink and customer service that is the foundation upon which the Mikuni empire has been built.

Signature drink: The Banzai Bellini, a bubbly concoction of sparkling wine and peach schnapps, tickles the nose and puckers the palate. The Key Lime Moto glows bright green. The Absolut Vanilla Vodka and Malibu Coconut Rum create a creamy mouthfeel without the use of any dairy. These and 15 other specialty cocktails are $6 each during happy hour.

Take a seat: Happy hour pricing is available only in the bar and sushi bar areas, but that's OK – these are the seats with the best views. Watch the sushi chefs and bartenders whip up your orders with intensity and fierceness while also experiencing the signature Mikuni greeting of a loud, enthusiastic shout of, "Irasshaimase!" (welcome) each time a new party is seated.

Bathroom break: These clinical facilities aren't necessarily somewhere you'd want to hang out. Get in, get out and get back to enjoying the show.

Alternative libations: Though the signature cocktails make up the bulk of the happy hour drink deals, other discounts are on offer. Draft beers – selections vary by location but include Sierra Nevada Pale Ale, Samuel Adams Boston Lager and Stella Artois – are $3.50, as is Geikkan hot sake. Beringer wines and Domaine St. Michelle sparkling wine are $5. Sho Chiku Bai Nigori and Haiku sakes are $7. Kanpai!

Something extra: Through Labor Day, Mikuni locations are partnering with Bacardi to celebrate and spread the word about Bacardi Dragon Berry Rum, flavored with strawberry and dragon fruit. In honor of this, pitchers of mojitos made with either Bacardi Dragon Berry or traditional Bacardi are $18. These prices are also valid at the offshoot Mikuni Kaizen (1017 Galleria Blvd., Suite 160, Roseville) and Mikuni-at-Northstar (5001 Northstar Drive, Suite 5101, Truckee) locations.
