Sausage, beer and sweet potato stew
Most stews require hours of preparation and slow cooking; this one can be made in only 20 minutes. Recipe from Linda Gasseheimer for McClatchy Tribune.
3/4 pound low-fat, mild turkey sausage
3/4 pound sweet potato
1/2 medium onion, sliced
1 medium green bell pepper, sliced
1 Granny Smith apple, sliced
2 large tomatoes, sliced
12 ounces beer
1 teaspoon dried thyme
Salt and freshly ground black pepper
Cut sausages into 2-inch pieces.
Peel sweet potato and cut into 1-inch pieces. Sauté sausage, potato, onion and green pepper in 3-quart nonstick saucepan over medium-high heat for 5 minutes. Add the apple, tomatoes, beer and thyme. Bring to simmer, cover with a lid and simmer gently 15 minutes. Add salt and pepper to taste.
Per serving: 694 calories (21 percent from fat), 15.9 g fat (3.8 g sat., 4.8 g mono.), 126 mg cholesterol, 42.9 g protein, 85.5 g carbohydrates, 15.1 g fiber, 1236 mg sodium.
