Recipes: Melon with honey-ginger

Serves 8

For its food classes, the Sacramento Natural Food Co-op uses honey from bee hives on Soil Born Farms' American River Ranch in Rancho Cordova and melons from Terra Firma Farms in Winters.


1/3 cup honey

1 cup water

One 1-inch piece of fresh ginger, peeled and thinly sliced

1/4 cup fresh-picked whole mint leaves

2 medium ripe melons (about 4 pounds total)

Mint sprigs for garnish


In a small saucepan, combine honey, water and ginger, and bring to a gentle boil. Stir well to dissolve the honey's sugar. Turn off heat and add mint leaves. Steep for 15 minutes or longer. Strain and chill.

Wash outside of melons well and dry. Spilt in half and scoop out seeds. Using a melon baller, scoop out as many evenly shaped melon balls as possible.

Place the melon balls into a decorative bowl and add ginger syrup. Mix well and chill completely.

To serve, scoop some of the melon balls into small bowls and pour a little bit of the ginger syrup over the top.

Garnish with a sprig of mint.
