Recipe:Zucchini hummus

Makes 2 1/4 cups

INGREDIENTS

1 large or 1 1/2 medium zucchini, peeled and chopped (2 1/2 to 3 cups)

1/2 cup tahini

2 tablespoons lemon juice

1 small clove garlic, peeled

1/2 teaspoon agave nectar

1/2 teaspoon sea salt

1/4 teaspoon ground cumin

INSTRUCTIONS

Combine all ingredients in a high-speed blender or food processor and blend until smooth.

Per 1/4-cup serving: 86 calories (70 percent from fat), 7 grams total fat (1 gram saturated), no cholesterol, 4 grams carbohydrates, 3 grams protein, 121 milligrams sodium, 2 grams dietary fiber.
