Prep time: 5 minutes, plus 1 hour refrigeration or freezing time
Possible substitutions: Cashews for the macadamia nuts; pecans for the walnuts; brown sugar (not packed), Sucanat, date sugar or maple sugar for the coconut palm sugar; golden raisins for the dates.
1 cup dry macadamia nuts
1 cup dry walnuts
1/4 cup coconut palm sugar
2 teaspoons vanilla extract
1/8 teaspoon sea salt
3/4 cup pitted dates
Combine macadamia nuts, walnuts and sugar in a food processor and pulse until mixture is coarsely ground. Add vanilla and salt and pulse several more times, until combined. Add dates, 2 to 3 at a time, pulsing between additions until each is well incorporated. The mixture will be sticky. Transfer the mixture to an 8-inch square pan and use fingers or a spatula to pack it down tightly. Refrigerate or freeze for at least 1 hour before cutting.
Per serving: 143 calories (63 percent from fat), 11 g total fat (1 g sat.), no chol., 11 g carb., 3 g protein, 15 mg sodium, 2 g dietary fiber.
