Chicken salad got her back on her feet

I recently had surgery on my foot and was recovering at Fort Vancouver Convalescent Center. On their menu was the most delicious chicken and cranberry salad. I ordered it at least three times a week. This salad had a creamy dressing (maybe mayonnaise), and possibly celery. It did not have nuts or onions.

I also had a chicken and cranberry salad at Shari's restaurant in Vancouver. It was very similar to Fort Vancouver's salad and was delicious. I would love to have this recipe or one similar.

Shari's restaurant also serves the best lemon sour cream pie. I would like to have this recipe too, or one similar, if anyone has it. Thank you.

Spicy Thai pizza

Prep time: 15 minutes

The Mailbox recently featured a quick and easy pizza recipe using a pre-baked pizza crust such as Boboli. We asked our readers to share their favorite Boboli recipes.

Today's recipes come from Jill Bower of Modesto and feature Foster Farms chicken products and Boboli brand prebaked pizza.


1/4 cup creamy peanut butter

1/4 cup teriyaki sauce

1 tablespoon Thai chili sauce

2 teaspoons honey

2 Foster Farms Rotisserie Breast Fillets, thawed, shredded (these are precooked)

1 prebaked pizza crust such as Boboli

1 cup shredded part-skim mozzarella cheese

1/2 cup shredded carrot

1/3 cup fresh bean sprouts

1/4 cup chopped salted peanuts

1 tablespoon minced fresh cilantro

2 green onions, thinly sliced


Preheat oven to 425 degrees. In a small bowl, whisk together the peanut butter, teriyaki sauce, chili sauce and honey. Place shredded chicken in another small bowl, add half of the peanut butter mixture and toss to coat.

Spread remaining peanut butter mixture over crust; top with chicken and cheese. Bake at 425 degrees for 10 minutes or until crust is golden brown. Sprinkle with remaining ingredients and serve.

Per serving: 412 cal.; 24 g pro.; 44 g carb.; 17 g fat (5 sat., 3 monounsat., 2 polyunsat., 7 other); 25 mg chol.; 758 mg sod.; 3 g fiber; 36 percent calories from fat.

Barbecue chicken pizza

Prep time: 20 minutes

Cook time: 14 minutes

Standing time: 10 minutes Serves 6

Here's another easy pizza recipe from Jill Bower. Use the barbecue sauce packet that comes with the Foster Farms Roasted Breast Chunks or bottled barbecue sauce.


9 ounces Foster Farms Roasted Breast Chunks

2/3 cup bottled barbecue sauce, or use barbecue sauce packet that comes with chicken

One 16-ounce baked pizza crust such as Boboli

1 cup shredded mozzarella

2 tablespoons real bacon pieces

1/4 cup thinly sliced red onion

2 tablespoons shredded smoked Gouda cheese

1 tablespoon chopped fresh cilantro


Preheat oven to 450 degrees. Pour barbecue sauce into a microwave-safe bowl. Heat in microwave for 30 seconds or until sauce is thawed. Spread 2 tablespoons of sauce on pizza crust; toss chicken chunks in the bowl with the remaining sauce. Spread mozzarella over the sauce on the pizza crust.

Distribute the sauced chicken chunks evenly over the cheese. Sprinkle bacon pieces over the chicken. Place pieces of red onion on the surface and top with Gouda cheese.

Bake for 12 to 14 minutes or until the crust is crisp and golden and the cheese at the center is bubbly. Remove from the oven and sprinkle the cilantro over the hot pizza. Let stand 10 minutes before cutting to serve.
