Recipe: Chinese baked bao dough

(using bread machine)

Preparation: 15 minutes, plus rising time

Cook time: 25 minutes

Makes: 8 big or 12 medium buns


For dough:

2 ounces unsalted butter, melted (about 4 tablespoons)

4 3/4 ounces water

14 ounces bread flour (about 3 1/3 cups)

1 1/4 tablespoons active dry yeast

2 1/2 ounces sugar (about 3/8 cup)

1 whole large egg

1 tablespoon instant nonfat dry milk

For egg wash:

1 egg

1 tablespoon sugar


Melt the butter and add to water. Put in bread machine. Add flour, yeast and all the other ingredients to the bread machine. Set bread machine program to make dough only.

When dough is finished, cut into 8 or 12 equal portions. Stuff with filling, pinch closed and put on sheet pan lined with parchment paper with pinched side down. Let sit in warm room temperature to double in size, about 1 hour. Meanwhile, make egg wash by beating egg and sugar. Brush buns with egg wash and bake 25 minutes in 350 degree oven.
