Note: Add a splash of vodka, gin or light rum for the adult set.

1/2 cup granulated sugar
A few sprigs fresh thyme, basil or mint
1/2 cup freshly squeezed grapefruit juice
2 cups club soda
In a small saucepan, combine sugar with 1/2 cup water. Bring to a simmer over moderate heat, stirring until sugar dissolves. Remove from heat. Add herbs; cover and let steep for 10 minutes. Remove herbs, then let cool completely.
Fill four 8-ounce glasses with ice. Pour grapefruit juice over ice; stir in 1 to 2 tablespoons of the herbed sugar syrup to taste. Top with soda. Serve garnished with herbs.
