Munchie Musings rounds up the "ethnic" food trucks in StocktonIn May of 2012 I posed the question, "Where are the ethnic food trucks?" Almost a year later, I'm here to tell you they are in Stockton.
We have an abundance of burgers, sandwiches, pizza, and tacos. But where are the Thai, crepes, piroshkis, Filipino, Caribbean, pasta, African, and other ethnically diverse foods?
The following four trucks are the newest to hit Stockton and San Joaquin County streets. Let me introduce you to Green Papaya, Spicy Grill, The Mamas and the Tapas, and Wok n Roll.

This watermelon lemonade margarita is perfect for your summer BBQ or a Cinco de Mayo celebration. And the kids aren't left out they get a nonalcoholic version of watermelon lemonade. You start the recipe with a seedless watermelon. Please, I beg of you buy a seedless one. The first time I made these I didn't. Do you know how long it takes to de-seed a seeded watermelon? A long, looooong time.
In the warmer months, I almost always have lemonade on hand, either a carton, freshly made, or my old standby: Crystal Light. You can make these drinks with whatever lemonade you have.

Stealth Cooking whips up rhubarb strawberry pie
Some desserts are too good to pass up all the time. That's just how I feel. It's the justification I use for moderation! And, how a recipe for a sweet treat like rhubarb strawberry pie is here in a stealthy cooking blog. To me, that means I make this pie when we have guests for a special occasion, so there's only one piece available for everyone! Most strawberry rhubarb pies have equal amounts of strawberries and rhubarb, but I find the strawberries overpower the taste of the rhubarb. Using more rhubarb than strawberries evens out the taste, with lemon melding the flavors. The small amount of butter makes this pie taste rich!
