Recipe: Candied carrot dressing

Makes enough for 10 servings

This dressing also works as a dip or on veggie sandwiches. Recipe from "Farm Fresh Southern Cooking" by Tammy Algood.

INGREDIENTS

2 cups shredded carrots

1 cup sweetened condensed milk

1/4 cup confectioners' sugar

1 tablespoon lemon juice

1 tablespoon honey

1/2 teaspoon lemon pepper

1/8 teaspoon salt

INSTRUCTIONS

Place the carrots, milk, sugar, lemon juice, honey, pepper and salt in the bowl of a blender or food processor. Blend until smooth.

Use immediately, or transfer to a covered container and refrigerate up to 3 days.
