Makes 2 cups
The Bee's Kathy Morrison adapted this recipe from several found on the Internet. It's totally worth the time and mess of pitting and chopping.
Serve with tortilla chips or on the side with grilled chicken or turkey.
2 cups sweet cherries, stemmed, pitted and chopped
1/4 cup red onion, finely chopped
1/2 cup chopped fresh cilantro leaves
Zest from 1 lime
Juice from 1 lime
1 jalapeño pepper, seeds removed, minced
1 clove garlic, minced
Salt and pepper to taste
Mix all ingredients in a medium bowl until well combined.
For best flavor, chill for an hour. Stir again before serving.
