Re "Polo, fashion draws crowds at fundraiser" (Our Region, Sept. 15): People might look at this picture of master sommelier Catherine Falls opening a bottle of champagne with a saber, and ask, What's the big deal?
After 30-plus years in the United States military attending many formal functions where opening a bottle of wine or champagne was a challenge, I was unsuccessful. I practiced with a saber and a broom stick marked with a black line showing where to strike in order to cleanly cut and the top of the bottle of wine or champagne.
Even though the bottle is scored in the neck for clean separation this is not an easy task. Notice her hand is holding the bottle low. Why? She wants to keep her fingers. Miss the mark and you have a broken mess. Then you get to strain the liquor through a fine filter and you are last to drink.
