Pro: This contraption looks like a Mason jar with a steel tube attached, but it helps make succulent roast turkey and chicken in a hurry. The poultry is roasted on high heat (starting at 450 degrees for 20 minutes, then 425 degrees for the duration) with the tube inserted in the center cavity, stuffed or unstuffed. The jar is partially filled with plain (but hot) tap water and placed outside the roasting pan. As the bird cooks, steam from the jar keeps the meat moist. It works best with fresh, not previously frozen, poultry. Even with that caveat, a 6-pound defrosted chicken took 1 hour 15 minutes to cook thoroughly (to 185 degrees). A 16-pound unstuffed turkey was ready in only 2 hours 15 minutes – about half the time of conventional roasting.

Con: Opening the oven door to baste the bird lets heat out and adds time. So, TurboRoaster makers recommend adding fat (and thus, more calories) to the bird before putting it in the oven to assure crisp, golden skin. Before roasting, coat the skin with butter or oil or (as some TR recipes suggest) lay strips of bacon over the breast. Attaching the tube to the water-filled jar while keeping the thin rubber gasket in place took a little practice.
