Chicken breast is only a tasty myth

Re "Boneless, skinless chicken breast rules - but why?" (Forum, Views on food, Jan. 5): Plaudits to Elaine Corn for her courage in challenging the accepted myth of the superiority of white- over dark-meat chicken. And she did so with such wit. We now await her urging pork producers to design chops other than those current dry, leathery things that resemble dining-table trivets. -- Spencer P. Le Gate, Sacramento
