Re State of emergency declared in drought (Page A1, Jan. 18): It's time for all the restaurants in California to stop serving water to customers unless requested. Likewise, once water is requested, restaurants should wait until glasses are empty again before refilling. Tens of thousands of gallons of drinking water are wasted daily at restaurants in California just by serving water unnecessarily to show hospitality. Water is our most precious controllable natural resource, and this simple course of action will save a significant amount.
