World's best hotel restaurants include three in California

The editors at the Daily Meal are at it again. They’ve compiled their list of “101 Best Hotel Restaurants Around the World” at their foodies-favorite website, which covers all things food and drink.

On the list are hotel restaurants in some surprising places, such as Zimbabwe, Jerusalem, Capetown, Scotland, Hanoi and the Cayman Islands, as well as a bunch in U.S. cities including New York, Washington, D.C., Palm Beach and even Orlando. The top pick is é by José Andrés at the Cosmopolitan in Las Vegas.

An exclusive trio of hotel restaurants in California made the list, masterminded by extraordinary chefs: Aubergine at L’Auberge in Carmel (No. 6), the Bazaar by José Andrés at SLS Hotel in Los Angeles (No. 23) and Sierra Mar at Post Ranch Inn in Big Sur (No. 100).

Aubergine’s rarefied menu is to the point: The “spontaneous chef’s tasting menu” is $125 per person; add $110 per person for the sommelier’s wine pairing and $175 for the premium pairing. The four-course menu is $98 a head (add $75 per for the wine pairing) and features such exotica as porcini mushrooms with “sea lettuce” and emulsion of oyster, young chicken with fermented leek, and Monterey Bay abalone “in its natural surroundings” ($40 extra). The underground wine cellar holds 4,500 bottles.

The Bazaar by Jose Andres specializes in traditional and “modern” tapas. Load your plates with cauliflower puree with lemon and crispy quinoa, seared Wagyu flank steak-piquillo pepper sphere, and chicken with honey dates and caviar mustard.

Multi-course prix-fixe lunches and dinners are the specialty, starring the likes of local mushrooms, house-cured goose prosciutto, braised pork cheeks, rose-geranium roasted quail and wild boar tenderloin.
