The dish: To remember our roots and family who still reside in Madrid, whenever our clan gathers, we enjoy making paella, the national dish of Spain. Arborio rice, peas, green beans, olives, saffron, shellfish, Spanish chorizo and chicken combine for a flavorful one-pot dish. Pair it with a green salad and a glass of classic Rioja, and everyone leaves the table satisfied until the next paella party!
