The dish: A friend gave me some of her home-grown tomatoes, and I layered those into a wonderful salad. First, spread cottage cheese on the bottom of the plate, and then place tomato slices on top of the cottage cheese. Drizzle the tomatoes with balsamic vinaigrette. Spoon your favorite homemade chicken salad or shrimp salad on top of the tomatoes and top with more tomato slices. Drizzle more balsamic vinaigrette over the tomatoes and sprinkle blue cheese crumbles over everything.
