The debut of a new Chando’s Tacos and the makeover of Paragary’s Bar & Oven are taking a bit longer than expected, so diners won’t be able to get a table at either for a while longer.

At Sacramento’s Paragary Restaurant Group, co-owner Randy Paragary said that he didn’t receive his remodel permits until yesterday for his namesake restaurant at 1401 28th St.

“The contractor estimates the work will be completed December 1st,” said Paragary, who owns the chain with his wife Stacy Paragary and executive chef Kurt Spataro. “We need a week or so for training so that puts us too close to the holidays. Therefore we will open in the first week of January.”

A handful of readers from Placer County have called or Tweeted this columnist, asking when they can expect Chando’s Taco’s to open at 943 Pleasant Grove Blvd. in Roseville.

Lisandro “Chando” Madrigal, who owns the company with his wife Karla Madrigal, told me: “We wanted to focus on our existing business and what we had going on, but our target is the end of September for opening. We’re in the middle of construction right now.”
