Susan Korec a.k.a. the Pasta Queen can be found selling her flavorful homemade pastas at farmers markets and food festivals throughout the Sacramento area. Based in Gold River, Korec started out focused on catering, but she now sells directly as well as taking orders by phone and online. My favorite so far has been her roasted butternut squash and kale ravioli (pictured). Simply heat the pasta and add a sauce of your choosing. We made our own butternut sauce, but the Pasta Queen sells many sauces of her own as well. Other raviolis include lemon ricotta in lemon pasta, porcini and truffles in egg pasta, spinach and pine nut in spinach pasta. She makes beef-and-pork meatballs and lasagnas and also creates vegan options such as raviolis with roasted vegetables in egg-free chili pepper pasta and roasted artichokes and spinach in red pepper pasta.
