In March, we dropped by the new Salt Sushi restaurant in Gold River a couple of times and wrote a “First Impressions” column that appeared in The Bee’s Ticket section. We liked it a lot, but neglected to try one of our favorite Japanese dishes, tonkatsu. So we dropped by the other day.
Salt’s version of the classic Japanese dish – a panko-breaded and deep-fried pork cutlet – was crispy, light and non-oily, with texture and flavor complemented by a complex dipping sauce whose ingredients include apple, tomato, vinegar and soy sauce ($13). Give it four stars.
