The dish: The paella is cooked on the grill. The bomba rice is cooked with chorizo, sofrito, and a chicken stock that is flavored with the cooked shrimp shells. It is seasoned with saffron and smoked paprika. The cooked bomba rice is topped with shrimp, mussels, clams, asparagus and peas. The meal is accompanied with a gazpacho salad and a Spanish flatbread called copa. it is a favorite of everyone and serves over 12 people.
