Polynesian chicken, gluten free (slow cooker)

Prep time: 30 minutes Cook time: 6 hours Serves 8

Ann Arn of Glendora hosts a regular women’s Bible study at her home. Several of the women eat gluten free. She was looking for easy, main course gluten-free recipes to make for a group.

This easy recipe, made in a slow cooker, should fill the bill for Arn.

1/3 cup cornstarch

1 teaspoon salt

½ teaspoon black pepper

2 pounds boneless, skinless chicken breasts, cubed

¼ cup olive oil

Sauce:

2/3 cup brown sugar

1 cup pineapple juice

1/3 cup gluten free soy sauce

½ cup crushed pineapple

Combine cornstarch, salt and pepper in a large sealable plastic bag. Add chicken and toss until all cubes are completely coated. Set aside.

Pour olive oil in a skillet and heat over medium to medium-low heat. Add the coated chicken and cook for 10 minutes, turning pieces until they are browned on all sides.

For the sauce, combine brown sugar, pineapple juice, soy sauce and crushed pineapple in a bowl and mix well.

Place half of the sauce mixture in a 6-quart slow cooker. Place all of the cooked chicken cubes on top of the sauce. Top with remaining sauce. Set slow cooker to low and cook for 4 to 6 hours. Serve over white rice.
