Almond cookies (gluten-free)

Last week the Mailbox featured a gluten-free main dish recipe for Ann Arn of Glendora to serve a group, some of whom were gluten-intolerant.
Today’s Taste of Home recipe would make a tasty gluten-free treat for Arn to serve with her main dish. This recipe was credited to Sherri Cox of Lucasville, Ohio.
One 8-ounce can almond paste
½ cup sugar
2 egg whites
1/8 teaspoon salt
Break up the almond paste into a large bowl. Combine the almond paste and sugar with a pastry blender until crumbly. Beat in egg whites and salt until smooth. Drop by scant tablespoonfuls, one inch apart, onto parchment paper-lined baking sheets.
Bake at 350 degrees for 15 to 18 minutes or until lightly browned. Cool for 1 minutes before removing from pans to wire racks. Store in airtight container.
