Jimboy’s Tacos opens in Woodland with new look, expanded menu

Folsom-based Jimboy’s Tacos has opened a new restaurant in Woodland, featuring an updated fast-casual setting and an expanded menu.

The restaurant at 2021 Bronze Star Drive in the Woodland Gateway shopping complex is open daily from 9:30 a.m. to 9 p.m.

It will be closed from 5:30 to 9 p.m. Tuesday for a private, invitation-only event to celebrate the grand opening.

The chain’s Northern California roots date back to 1954, when Jim and Margaret Knudson converted a 16-foot trailer at Lake Tahoe into a mobile kitchen, eventually hauling it to Kings Beach on Lake Tahoe’s north shore.
