Spitz Mediterranean eatery prepares to launch in Roseville. ‘We’re super stoked’

A health-focused Mediterranean chain restaurant is entering its final stages of preparation to open its first Northern California location, which will be in Roseville.

Spitz Mediterranean Street Food, based out of Los Angeles, is expected to make its north state debut next month, according to franchisee Jaskarn “Jaz” Sibia. The region’s first Spitz location is replacing a Pieology restaurant at 2030 Douglas Blvd., Suite 30.

Sibia previously told The Sacramento Bee that he and business partner Sandeep Gill had an instant love for the restaurant’s take on classic Mediterranean fare when they tried it in 2024. From that point on, the pair were adamant they wanted to introduce the concept to their hometown.

“We’re super stoked,” Sibia said. “We got such a diverse, bold, vibrant menu.”

Spitz’s offerings include loaded doner wraps, street fries, salad bowls and more. The restaurant also has vegan versions of many of its most popular menu items, substituting meat for falafel and its aioli and tzatziki sauces with lemon-herb tahini dressing.

Though the restaurateurs originally hoped to launch the eatery in April, some paperwork delays have pushed the expected grand opening to late June or early July, Sibia said.

“The kitchen is pretty much wrapping up right now, and our next step is really focusing on that lobby,” Sibia said. “We’re gonna have an artist from LA fly in and pretty much ... spray paint the whole store. He’s keeping a local touch, so he’s pulling parts of things from the local Roseville community, and he’s going to hand draw pretty much the whole lobby.”

The new Roseville Spitz restaurant will begin hiring its staff in about two weeks, Sibia said.

Once the restaurant is set to open in the summer, Sibia said there will be a soft opening event for first responders, with free meals for firefighters, police officers and healthcare workers.

A larger grand opening party open to the public will include a DJ, face painting and merchandise giveaways throughout the day, according to Sibia. The Spitz team will share further details on the eatery’s Instagram, Facebook and TikTok pages as they become available.

“It’s exciting because we got a great community behind us,” Sibia said. “We’ve had a lot of people stop by, checking out the store ... We’ve never had this when new people walk in and ask when we’re opening. It’s been really cool to see.”

Currently, Spitz has six California locations, all in the Los Angeles and San Diego areas. While Sibia and Gill have been developing the Roseville Spitz location, they have also been making plans to introduce the chain to other parts of Northern California.

Sibia said the pair have started developing other sites in the Sacramento region, and eventually they hope to open Spitz restaurants in the Bay Area.

“I personally have been craving (Spitz) for like, months,” Sibia said. “I am super excited to try (the food) ... I haven’t had it in a while.”
