Stir-fried Thai eggplant

The dish: Asia is our favorite part of the world to visit. That may be in part because it’s the source of the most intriguing and delicious world cuisines. Here is a shot of a Thai eggplant and pepper-stir-fried dish my wife, Rose, cooked last week. The eggplant, peppers and Royal Thai Basil were all from the garden.
