I have a small flock of hens here in Curtis Park, and when you have the availability of fresh-laid eggs, you get creative with breakfast. Sunday’s breakfast was breakfast tacos: soft tortillas filled with perfectly scrambled eggs, crispy bacon, sharp cheddar cheese, avocado slices, salsa, sour cream, green onions and jalapeño slices.
