Devil's food cake

Prep time: 20 minutes Cook time: 45 minutes Serves 12

Victoria Tupou of Sacramento loves chocolate and was looking for a good chocolate cake recipe.

I have been making this cake to rave reviews for years. It should fill the bill for Tupou.

Use your favorite frosting on this cake or dust with powdered sugar.

1 1/2 cups all-purpose flour

1 1/2 cups granulated sugar

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1/3 cup unsweetened cocoa powder

1 cup buttermilk

2/3 cup vegetable oil

2 eggs

1 teaspoon vanilla

Preheat oven to 350 degrees.

In the bowl of an electric mixer, combine flour, sugar, baking soda, salt and cocoa powder. Mix well.

In a small bowl, or 2 cup measuring cup, combine buttermilk, oil, eggs and vanilla. Mix very well with a fork. Pour into flour mixture. Mix on medium speed of electric mixer until all combined and smooth. Pour batter into two greased and floured cake pans. Bake at 350 degrees for about 40 to 45 minutes or until toothpick inserted in center comes out clean.

Cool a few minutes before removing from pans. Cool completely before frosting with your favorite frosting.
