Popular Vietnamese sandwich chain expanding to revamped Davis shopping center

A beloved Vietnamese sandwich shop chain featuring banh mi sandwiches is joining the Davis Collection retail center.

Paris Banh Mi Cafe Bakery will open its third California location in Davis after stores opened in Elk Grove and Clovis.

The banh mi Vietnamese sandwiches are typically served on French baguettes filled with pork, pickled vegetables and other fillings. The influence of French baguettes dates back to the early 20th century, when France colonized Vietnam, and the banh mi sandwiches have since become a staple in the country, according to the company’s website.

These specialty sandwiches can also be served on croissant or burger buns. Other food items include wonton noodle soups and vermicelli noodle bowls.

The expansive menu also features drink items like boba teas, fruit teas, milk teas and slushies.

Paris Banh Mi Cafe Bakery first opened in Orlando, Florida, and has amassed over 50 locations nationwide, according to the company.

The sandwich shop is expected to fill a 2,000-square-foot space inside the retail shopping center, joined by other anticipated stores — Nordstrom Rack, PetSmart and Ulta Beauty.

The Davis Collection, owned by New York-based Brixmor Property Group Inc., is scheduled to finish redeveloping the property this fall, the Sacramento Business Journal reported. Retail stores will be open during this process. The retail shopping center replaces University Mall located at Russell Boulevard and Anderson Road across from UC Davis’ main campus.
