Inn Kensington biscuit

Makes about 10 large biscuits
Linda Halsey of Rialto was looking for a good biscuit recipe.
This recipe was featured in the Mailbox Jan. 8, 1997, and is credited to the Inn Kensington in Kensington, Contra Costa County.
4 cups cake flour
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
1 2/3 cups buttermilk
1 egg, lightly beaten
Preheat oven to 425 degrees. Mix flour, sugar, baking powder, baking soda and salt in the bowl of an electric mixer. Add shortening and mix with paddle attachment or pastry blender. Add buttermilk and blend 30 seconds.
Turn dough out onto a lightly floured surface and pat into a round about 1½ to 2 inches thick. Cut with a 2-inch floured biscuit cutter.
Place about 1 inch apart on an ungreased baking sheet. Brush top with beaten egg. Bake 20 to 25 minutes until biscuits are golden.
