Barbecued short ribs
Prep time: 10 minutes
Cook time: 2 hours
Serves 4 to 6
George Halaway of Sacramento was looking for some good lamb shank and short rib recipes. The Mailbox featured a lamb shank recipe last week for Halaway. Today’s short rib recipe, from Claire Gliddon of Fair Oaks, is easy and sounds like a good match for Halaway.
3 to 3 1/2 pounds beef short ribs
1 cup ketchup
1/2 cup water
1 medium onion, chopped
1/4 cup firmly packed brown sugar
3 tablespoons Worcestershire sauce
2 teaspoons garlic salt
1 teaspoon salt
2 teaspoons prepared mustard
1/4 teaspoon thyme
Preheat oven to 350 degrees. Place ribs in baking pan or casserole dish. Combine remaining ingredients; pour over ribs. Cover and bake for 1 ½ to 2 hours or until tender. Serve ribs with sauce.
