Selland’s Market-Cafe alum with ‘Top Chef’ ties launches new pizzeria in Folsom

A chef with local and Southern California ties hope people will “Flock” to his new pizzeria in Folsom.

Jordan Davis’ new restaurant, Flock, opened Feb. 4 at 185 Placerville Rd., Suite 150 just off Highway 50. It marks a return to the region for Davis, who oversaw the El Dorado Hills Selland’s Market-Cafe’s gourmet market and catering programs in the early 2010s before leading highly-regarded restaurants in his native Southern California.

Flock is geared as a refined option for family outings or nights out, Davis said in a media release. The pizzeria’s dough is made with organic flour and cold-fermented for three days, then could be topped with Asian pear, prosciutto, arugula, Parmesan cream, mozzarella and dried oregano.

“Flock is the perfect place to gather — whether it be sharing a meal together as a family, on a date night, or enjoying an evening out with friends. I look forward to welcoming guests to the restaurant,” Davis said in the release.

A range of starters take inspiration from across the globe, from chili-lime prawns with zucchini tzatziki to crispy potatoes with harissa aioli. Non-pizza mains include short rib cavatelli, petrale sole a la plancha and a New York strip steak with shishito salsa verde.

After leaving Selland’s Market-Cafe, Davis had stints as the chef and managing partner of Fish Public and chef of Herringbone, both seafood-focused restaurants in San Diego. He then oversaw food programs for popular nightclub Hakkassan’s San Diego, Los Angeles and Austin outposts, and was the culinary director for “Top Chef” alum Brian Malarkey’s five San Diego and Orange County restaurants.

Prior to Selland’s, Davis spent six years at Boulevard in San Francisco, the 2012 winner of the James Beard Award for “Outstanding Restaurant” across the entire U.S. He also cooked at “Top Chef” alum Kevin Gillespie’s Woodfire Grill in Atlanta and renowned nose-to-tail Los Angeles restaurant Animal.

Flock is currently open from 4-8 p.m. on Wednesday, Thursday and Sunday and until 9 p.m. on Friday and Saturday. Lunch and brunch service is coming soon, according to the release.
