Midtown Italian restaurant to launch a new pizza concept. What is Apulian pizza?

On its social media, midtown Italian restaurant Adamo’s Kitchen announced it would be opening a new concept, Dodici Pizzeria, at the corner of 12th and D streets in Alkali Flats. The post said it would serve “authentic Italian pizzas with recipes passed down from a true pizzaiolo.”

The opening is actually the delayed realization of the co-owner’s vision. Chiara Adamo first built out the space in 2021 with a plan to open a pizzeria. However, as the renovation neared completion, she became pregnant with twins.

So she leased the business to another restaurateur friend. The space initially opened in 2022 as the pizzeria Anonimo.

When owner Chris Jarosz died in May 2023, the restaurant pivoted. Manager Juanes Ramazzini took the reins, initially just renaming it to Luccas, while simultaneously opening a new pizza concept in the Ice Blocks complex, Bambina’s Pizza & Pasta. Last year, Luccas closed its downtown location, and now operates as a business within Bambina’s.

The closure created an opportunity for Adamo to go back to the original plan.

“We talked and were like, hey, do we want to do this or not? And then it was like, well, it’s either going to be now or we’re gonna have to wait another five to 10 years,” she said. “For years, we’ve received questions at Adamo’s: ‘why no pizza on the menu?’ Now we can respond, ‘head over to Dodici and give it a try!”

Dodici will specialize in Apulian-style pizza, which is more rustic than the famous Neapolitan pizza. The dough is made with a combination of type 1 and 0 flours, which are less finely ground than the 00 flour used in Naples. The dough is fermented for 48 hours, hand-stretched and cooked in the kitchen’s all-electric Cuppone Italian Pizza oven.

The menu will feature pizzas, calzones and salads. After a refresh of the interior and pending inspections, Adamo hopes to open Dodici in early February.
