Flossing teeth on cook line. What Sacramento area restaurant inspections revealed
Sacramento County health inspectors gave eight restaurants citations for health code violations including one establishment where an employee was observed flossing their teeth at the cook’s line.
Inspectors also closed another spot after finding up to 225 rodent droppings throughout the facility.
What do these inspections mean?
While a yellow placard signals two or more major violations, these are typically corrected or mitigated during the inspection, according to the Sacramento County Retail Food Inspection Guide.
A red placard, however, signals “imminent danger to public health and safety” and suspends an establishment’s health permit until violations are corrected. This could include, but is not limited to, major vermin contamination.
In contrast, a green placard means a restaurant passed inspection.
The county performs about 14,000 inspections annually and about 97% of establishments pass, spokesman Ken Casparis previously told The Sacramento Bee.
Approximately 1% of inspections result in a closure, he said. These were the results of Sacramento County food facility inspections for Thursday, May 28, through Wednesday, June 3, as of Thursday, June 4. - Sacramento County Health Inspectors gave a red placard to the barbecue restaurant after discovering up to 225 rodent droppings throughout the facility including under the three-compartment sink and dry storage unit.
- The facility had 10 houseflies in the trash can and an additional 20 houseflies in the outside back area.
- Heavy black residue was observed in the floor drain near the handwashing sink.
Our Family BBQ and Pies was reinspected on Saturday, May 30 and passed with a green placard.
The Bee called the business but no representative was available at the time.

- Health inspectors cited the Arden Arcade Mexican restaurant after discovering no paper towels at the near handwashing sink.
- Bagged cooked rice was improperly cooling in the walk-in cooler.
- The facility had no food handler cards available for all employees at the time of inspection.
- Tomatoes and garlic oil were measured above proper cold holding temperatures.
Los Amores de Julia was reinspected on Friday, May 29 and passed with a green placard.

- Health inspectors cited the Bohemian Village tea shop after finding the back-hand sink fully blocked by dishes.
- Sticky rice was measured above proper cold holding temperature.
- Hot water in the restroom’s auto-run faucet was measured below proper hot water temperature.
- An open bag of sugar was stored on the floor in the back kitchen.
Ume Tea Sacramento was reinspected on Friday, May 29 and passed with a green placard.
I Love Teriyaki

- Health inspectors cited the Elk Grove Teriyaki chain after finding a California roll held above proper cold holding temperatures.
- The dishwasher skipped sanitizing a large container used to marinate chicken and a knife in the third compartment sink.
- Insufficient lighting was found in the walk-in refrigerator.
- The floor, metro racks and fan guards were in need of deep cleaning.
I Love Teriyaki was reinspected on Friday, May 29 and passed with a green placard.

- Health inspectors cited the Barrett Meadows American diner after finding one nymph cockroach in a container of flour.
- The facility’s food manager certificate was not present at the time of inspection.
- In use waffles machine located on the right drainage board of the 3 compartment sink.
- Whipped butter and melons were measured above proper cold holding temperatures.
Lumberjacks Restaurant was reinspected on Friday, May 29 and passed with a green placard.

- Health inspectors cited the Arden Arcade Asian restaurant after discovering cooked shrimp, raw beef, raw shrimp and raw ground pork held above proper cold holding temperatures.
- An employee beverage without a lid/straw was stored on the prep table and shelving.
- One employee was seen flossing their teeth at the cook line before proceeding to go back to cooking and then grabbed clean food contact surfaces.
- Cooked chicken and beef made the same day was observed cooling inside the prep cooler top.
Lucky Wok was reinspected on Friday, May 29 and passed with a green placard.
Dussehra
313 Iron Point Road, Folsom

- Health inspectors cited the Folsom eatery after discovering chicken puff in a warmer measured below proper hot holding temperature.
- The facility’s sanitizer at the warewash machine was measured at 0 ppm.
- A flour container lacked a lid.
- The facility had foil lining shelving under the hood that was not clean.
Dussehra was reinspected on Friday, May 29 and passed with a green placard.
7-Eleven
1341 J St., Sacramento
Number of violations: 3
Date: Friday, May 29
- Health inspectors cited the Mansion Flats 7-Eleven after finding more than a dozen foods improperly held above proper cold holding temperature including King Hawaiian sliders, tuna sandwiches, chicken pot stickers and sharp cheddar cheese.
- Tongs and pizza cutters were not exchanged or cleaned and sanitized at least every four-hours after use.
- An island open air cooler was observed unable to maintain potentially hazardous foods below proper temperatures.
7-Eleven was reinspected on Saturday, May 30 and received an additional yellow placard. The market has yet to be reinspected as of Thursday, June 4.
El Puerto Mexican Restaurant
10851 Folsom Blvd., Rancho Cordova

Date: Friday, May 29
- Health inspectors cited the Rancho Cordova Mexican restaurant after observing an employee touch raw meat from the cold top and then touch cheese without washing his hands.
- The facility had no soap stocked in the hand-washing station.
- No food safety certificate was available at time of the inspection.
- The facility’s table can-opener and can opener holder had food residue build up.
El Puerto Mexican Restaurant was reinspected on Monday, June 1 and passed with a green placard.
