Sacramento-based Caffe Ettore Inc. has filed for Chapter 11 bankruptcy protection, but its two local shops remain in operation.

The company operates Ettore’s Bakery & Café sites at 2376 Fair Oaks Blvd., and at 390 N. Sunrise Ave. in Roseville. The business also supplies cakes and baked goods to Nugget Markets throughout Northern California.

Documents from the U.S. Bankruptcy Court for the Eastern District of California show a Tuesday Chapter 11 filing.

The documents note that funds will be available for distribution to unsecured creditors, and a box is checked for an estimated 100 to 199 creditors.

Estimated assets are checked at between $1 million and $10 million, which matches the checked box for estimated liabilities.

The documents are signed by Ettore Ravazzolo, president and CEO of the corporation. The Swiss pastry chef started the local business in 1985.
