Rubio’s to open in El Dorado Hills complex next year
Rubio’s, the Carlsbad-based restaurant chain specializing in Mexican food, will open an outlet next year in El Dorado Hills Town Center.
The leased, 2,800-square-foot restaurant at Highway 50 and Latrobe Road will undergo upgrades and is projected to open by the end of spring in 2016, employing about 35.
Currently, there are nine Rubio’s restaurants in the Sacramento area.
Started in 1983 in San Diego, Rubio’s Restaurants Inc. now oversees nearly 200 restaurants in California, Nevada, Arizona, Colorado and Utah.
