Seafood Pasta

Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 tsp red pepper flakes (optional)

  • 14 oz. thawed seafood mix
  • 13 oz. dry spaghetti
  • 1 bunch flat-leaf parsley, thinly sliced
  • Salt and pepper, to taste

Directions:

  1. Heat olive oil in large saucepan over medium heat.
  2. Add onion and cook, stirring, 5 minutes or until onion softens. Stir in red pepper flakes, if using, and cook 1 minute or until aromatic. Add tomato and bring to a boil. Reduce heat to low. Simmer 5 minutes or until sauce thickens slightly. Season with generous pinch of salt and pepper.
  3. Add seafood mix and gently fold through sauce. Reduce heat to low. Cook 2 minutes or until seafood is just cooked through. Remove from heat.
  4. Meanwhile, cook pasta in a pot of salted boiling water following the box’s directions until al dente. Reserve a couple ladlefuls of starchy pasta liquid in case the sauce needs it.
  5. Add pasta and ⅔ of parsley to seafood mixture. Gently fold to combine and add pasta water if needed to bring together sauce. Top with the remaining parsley. Serve immediately.
