Dave’s Hot Chicken in Folsom requires waiver for some spices, what else is on its menu?

Dave’s Hot Chicken might be to die for — literally.

The Folsom establishment makes customers sign a waiver before consuming its seventh-level spice, which is called “the reaper,” according to the Sacramento area’s director of operations, Jose Velasquez.

The chicken, at any spice level, may be served with fries, cheese fries, macaroni and cheese or kale slaw. The lowest level of spice a customer can order is no spice at all; the other five options range between that and the reaper.

The Folsom location opened on Oct. 27 to great success, according to Velasquez.

“The community has been very welcoming and receptive to the brand,” he said via email. “We are happy to be part of this great community.”

Velasquez moved to Sacramento from Chicago to operate Dave’s two franchises in the greater Sacramento area, the other being at 3409 Arden Way near Watt Avenue in Arden Arcade.

Dave’s was started by four childhood friends in East Hollywood who had $900, a concept for hot chicken and a tiny stand in a parking lot. Thanks to Instagram buzz, it grew from there, according to the company’s website. Velasquez said the company now has 96 locations.

Velasquez said he also plans to open a Fair Oaks location that is currently under construction at 8810 Madison Ave. in what used to be a Kentucky Fried Chicken.
