Capy Cafe to open in Folsom with coffee, matcha and tea on the menu

A new cafe will open its doors this weekend at Folsom’s Willow Creek Town Center.

Capy Cafe, 1001 E. Bidwell St., Suite 102, will have its soft opening Saturday as it looks to offer customers matcha, coffee and tea, according to owner Kevin Nguyen. The shop's hours will be 7 a.m. to 3 p.m. daily for the first two weeks. Nguyen said the hours could expand into the evening.

Capy Cafe wants to teach customers what goes into the perfect matcha, Nguyen said, helping them understand the nuances of matcha from different regions of Japan.

Capy Cafe purchases its matcha from Japan, according to Nguyen, who said flavors vary by region. Uji matcha is sweet and nutty, Nishio matcha is mild, and Kagoshima matcha has an earthy flavor.

“You don’t just come in and say I’d like a matcha latte,” he said. “I would go like, ‘Which region would you like?’ And then they can ask about it.”

While Capy Cafe has not released its final menu, Nguyen said his favorite item is the matcha latte, which consists of matcha, milk, foam and an optional sweetener. He said the foam is also made from matcha.

Matcha might be Nguyen’s focus, but not everybody is a matcha person, including his wife, Anh Nguyen, who helped expand the menu to include tea.

Capy Cafe will have both milk tea and fruit tea options, according to Anh Nguyen. The two fruit teas are the sunrise tea — strawberry fruit tea with orange juice on top — and the sunset tea — a mango fruit tea with a butterfly pea flower on top. Both are made with fresh fruit.

“I don’t drink coffee and I don’t drink matcha, so that’s why I like fruit tea,” she said. “Other places just do syrup. I don’t like that. I want fresh fruit in it.”

As for coffee, options include a latte, cold brew and egg coffee — a slow-drip Vietnamese coffee topped with egg cream.

The shop is named after the capybara, according to Nguyen, who said the animal is known for being calm, premium and lovable — qualities he wants to reflect in the cafe.

“We want you to chill, and then we only provide you premium product — you know exactly what’s in your drink — and then we’re lovable people,” he said.

A total of six business partners, including Anh and Kevin Nguyen, will operate the store out of the roughly 1,300-square-foot space. The other business owners are Bang Nguyen, Phuong Nguyen, Vathana Yean and Thuan Luu. Kevin Nguyen said a grand opening event is expected next month.
