Caviar capital: Sacramento County acquisition combines two major US caviar producers

A Sacramento County caviar producer, known for supplying some of the nation’s best restaurants but beset by financial difficulties in recent years, has agreed to a sale.

Elverta-based Sterling Caviar was acquired by Tsar Nicoulai Caviar, another producer based in Sacramento County, a region that supplies the majority of the country’s domestic caviar.

“This strategic acquisition of Sterling will not only allow us to compete with larger global caviar producers, but also showcase our unwavering commitment to sustainability and innovation on a broader scale,” Tsar Nicoulai Caviar President Ali Bolourchi said in a statement.

Sterling was forced into receivership earlier this year after accumulating millions of dollars in debt to its creditors, according to the Sacramento Business Journal.

Sterling said the company’s general manager and some other key personnel would remain in place through the acquisition.
